Elk Sloppy Joes with Homemade Pickles

Looking for a fun, quick and delicious dish using ground elk? Try this old favorite, Sloppy Joes, with my special made-from-scratch recipe and homemade pickles that are sure to please your guests.
PREP TIME: 5 MIN COOK TIME: 30 MIN SERVES: 4
1 English cucumber, thinly sliced
4 sprigs fresh dill
3 whole garlic cloves
¼ cup white vinegar
2 tbsp sugar
1½ tsp salt
1 pint jar
Cold water to fill jar
Stuff cucumber slices into the pint jar.
Add the rest of the ingredients, seal and shake for about 30 seconds.
Put the jar in the refrigerator and let chill for 30 minutes. Pickles will last up to two weeks.
1 lb ground elk
½ yellow onion, diced
1 green bell pepper, diced
2 garlic cloves, minced
1 cup (8oz can) tomato sauce
½ cup ketchup
2 tbsp yellow mustard
1 tbsp olive oil
1 tbsp tomato paste
1 tbsp Worcestershire sauce
1 tbsp brown sugar
1 tsp chili powder
1 tsp paprika
1 tsp salt
½ tsp black pepper
4 hamburger buns, toasted
Heat the olive oil in a large skillet over medium heat.
Add the ground elk and break it apart with a spoon or spatula. Cook until browned.
Stir in the onion, bell pepper and garlic, cooking until the vegetables are soft, about 3-5 minutes.
Add the tomato paste and stir for one minute.
Pour in the tomato sauce, ketchup, Worcestershire sauce, brown sugar, mustard, salt, black pepper, paprika and chili powder.
Stir everything together and bring to a simmer. Reduce the heat and continue to simmer for 15 to 20 minutes until the sauce thickens.
Taste and adjust seasonings as desired.
Spoon the Sloppy Joe mixture onto the toasted hamburger buns, top with homemade pickles and serve immediately. Sloppy Joes are also an easy recipe to make ahead of time and freeze for a later meal. Enjoy!
